Question
I'm 27, weigh 72kg, and have a bit of a belly. Could this be why I'm having trouble breathing, even when I'm just sitting? It's definitely different from how I felt before I had the belly.

Yes, excess belly fat can sometimes put pressure on your diaphragm, which may lead to breathing difficulties, even while sitting. It can restrict lung expansion and make breathing feel more labored.
