I recently got an eye checkup and found out I have 0.75 CYL in my prescription. I really don't want to wear glasses or contacts or go for surgery. The doctor recommended glasses, but I'm not keen on that. Are there any natural ways to improve my eyesight, like diet changes or simple eye exercises?

Yes he is right. As our eyes should work simultaneously. So if we do surgery on one eye, the effect will be total for both eyes. It's not like that if your right eye is going out means we have to operate that eye only . On examination, whatever the non dominant eye will be operated.
