Also, what would be an ideal or healthy Vitamin B12 level for someone of my age (27 years) and height (5.11)?

What does 'high MCV and MCH' mean on a blood test?

High MCV & MCH indicate macrocytosis. The cells are bigger and carry more hemoglobin.
